The Vineyard

  • Type of soil : Clay and limestone, with gravel
  • Climate : Mediterranean with Atlantic influence
  • Elevation : 80 – 120 m
  • Average Yield : 55hl/ha
  • Harvest : By hand
  • Pruning : Cordon de Royat and Simple Guyot
  • Density of planting : 4400 vine plants/ha
  • Age : 13 – 25 years old

Vinification

The grapes are destemmed on arrival at the winery and placed directly in the pneumatic press in a regulated atmosphere saturated with carbon dioxide. Fermentation at a controlled temperature of 17°C, followed by 4 months of aging.
