Vinification
The grape harvest is destemmed on arrival at the cellar and placed directly in the pneumatic press in a regulated atmosphere saturated with carbon dioxide gas. The fresh harvest is then pressed with great care. Fermentation taes place with strict temperature control. (The muting operation then proceeds in order to keep the desired sweetness at the wort). This is followed by “mutage” to maintain the desired sweetness.
